Barton Seaver is known as a sustainable seafood innovator and food policy influencer. His passion for seafood was originally fostered at The Culinary Institute of America.

Seaver returned to his alma mater on February 9 for a book signing at the school's Marriott Pavilion. In addition to making that appearance, he was also the commencement speaker at CIA's ceremony for culinary arts and baking and pastry arts graduates.

During the commencement, Seaver talked about the responsibility people have to help the environment. He said that a chef's impact is how they act as citizens and neighbors.

After graduating from CIA, Seaver became a top chef at several seafood restaurants. He was named the Chef of the Year in 2009 by Esquire

Seaver left the culinary world to become an active speaker and writer about seafood, sustainability and health. He is the director of the Sustainable Seafood and Health Initiative for the Center for Health and the Global Environment at the Harvard T.H. Chan School of Public Health.

Seaver is a former National Geographic fellow. He is the author of seven books and won an International Association of Culinary Professionals Cookbook Award last year.
