Chef French’s dishes feature the bounties from Biltmore’s own fields, farms and vineyards together with wood-fired pizzas and handmade pastas.
Chef French comes to Biltmore from the Mobil Four-Star, AAA Four Diamond Charleston Grill in Charleston, S.C. He began his culinary career at Magnolia’s restaurant, also in Charleston, where he served in various capacities over the course of five years including executive banquet chef. He earned an associate of science degree in culinary arts from Johnson and Wales University in Charleston.
Although Chef French's dishes reflect the flavors of a Blue Ridge mountain retreat, Bistro guests could be forgiven for thinking they've stepped into a café somewhere in Provence or Tuscany. The tables surround an open kitchen where today's harvest is sautéed and stirred, grilled and flavored with the themes of the region. Bistro features the bounties from Biltmore's own fields, farms, and vineyards together with wood-fired pizzas and handmade pastas.
